Ingredients

  • rice
  • broccoli florets
  • carrots, julienned
  • purple cabbage, sliced
  • mushrooms, halved
  • olive oil
  • cilantro
  • lime

Steps

  1. 1/2 cup raw cashews
  2. 1 tbsp green curry
  3. 160 ml coconut cream
  4. 1/2 tbsp lime juice
  5. 1 tsp fish sauce
  6. 1 tsp brown sugar
  7. 1/4 tsp salt
  8. Make the curry sauce by adding all ingredients in a blender and mix for 2 min until smooth.
  9. Cook the rice.
  10. Steam the broccoli and carrots and stir fry the mushrooms and cabbage in olive oil.
  11. Add rice in bowls top with veggies and drizzle over the curry sauce. Garnish with cilantro and lime.
