Green (Parsley) Turkey Meatballs

Needs to sit in fridge for 30 minutes

Green Turkey Meatballs - Make

Ingredients

  • 500g turkey or chicken mince (thigh mince better if you can get it)
  • 10g ( 1/2 cup) yield, bolted Paisley leaves and flowers, chopped
  • 50g (1/2 cup) fine bread crumbs
  • 40g (1/2 small) white onion yield
  • zest of one lemon
  • 1 egg
  • 1 tsp table salt (6g)
  • 1/4 tsp ground black peppter
  • 1/2 tsp corriander seeds, ground
  • 1 garlic clove
  • a little flour (to dust later)

Steps

  1. mix garlic, parsley, onion , ground seeds, lemon in small food processor to a paste
  2. mix paste, crumbs, meat, egg, salt & pepper in a metal bowl
  3. roll. makes about 20 meatballs set aside for 30 minutes

Green Turkey Meatballs - Cook

Steps

  1. Roll meatballs in flour, set aside
  2. Warm pan to med/high (6)
  3. Add plenty of veg oil, keep some side
  4. Add meatballs to pan, cook for about 12-15 minutes, continuously rolling to they cook evenly
  5. serve with garlic sauce
