Pickled Daikon & Carrot (Đồ Chua)

Ingredients

  • 1 med/lg carrot
  • 1 daikon (equal amount by weight)*
  • 1/4 cup white sugar
  • 1 tbsp sea salt
  • 1 cup water
  • 1/2 cup rice wine vinegar

Steps

  1. slice daikon & carrot with mandolin, use the bigger of the smallest size. it will get quite floppy as it pickles
  2. put carrot & daikon in a large bowl
  3. add sugar and salt, massage until disolved*
  4. add water & vinegar
  5. cover and set aside for an hour if eating right away, or put in mason jar overnight

Notes

    1. daikon are pretty huge, so just assume that you’ll end up with extra
    1. pickle recipes usually you add sugar and salt to water, boil and then add to veggies. not sure what the difference is here
