Ingredients

  • 1 medum red onion, peeled and very thinly sliced (with mandolin)
  • 3/4 cup apple cider vinegar
  • 1/4 cup water
  • 2 tsp maldon salt
  • 1.5 tbsp palm sugar
  • pinch of oregan

Steps

  1. bring liquid to boil with salt and sugar
  2. remove from heat
  3. add oregano
  4. pour overp onions
  5. cover and let cool

Notes

  • if eating immediately, minimum 1 hr
  • ideally overnight
