Ingredients

  • Cake
  • 2 Large Egg
  • 6 Tbsp Milk
  • 6 Tbsp Grapeseed or Canola oil
  • 1/4 tsp salt
  • 6 Tbsp cocoa powder
  • 8 tbsp flour
  • 8 Tbsp Sugar
  • 2 tsp baking powder
  • Filling
  • Dulce de leche (1 can sweetened condensed milk, boiled for 2.5 hrs)
  • Cashews
  • Ganache
  • 400g chocolate (70% Lindt)
  • 200ml whipping cream

Steps

  1. Dulce de leche**
  2. Fill large pot with water, 1 inch minimum above top of can
  3. boil for 1 hr
  4. turn over, boil for 1.5 hrs
  5. Remove from heat, set aside
  6. Filling**
  7. 1/2 Cup Sugar
  8. Salt
  9. Little water
  10. Boil
  11. add nuts
  12. Stir constantly. First crystalyzes, then browns
  13. set aside on baking sheet
  14. Cake**_
  15. Mix dry ingredients (flour, cocoa, baking powder, salt)
  16. Whisk milk & egg, add oil
  17. Add dry to wet & mix
  18. Butter pan
  19. Dust with flour
  20. 35 minutes @175C(350F)
  21. Remove, let cool on rack
  22. cover in saran wrap if you’re not going to make cake right away
  23. Ganache**
  24. Warm milk to simmer/just before boil. DO NOT LOOK AWAY
  25. Pour into glass bowl
  26. add chocolate
  27. whisk
  28. whisk some more, until you get good consistency
  29. Let cool a few minutes until it gets the right pouring consistency
